Recipe by Chef Abraham Risho
The Monte Cristo has the amazing versatility of being both savory and sweet at the same time. That beautiful bridge between breakfast and lunch that we all crave so much on week- ends: BRUNCH!
Chinese Five Spice has the same qualities, working well with sweet flavors, as well as savory. In the batter, however, you’re looking for a texture a little thicker than crêpe batter but a little thinner than pancake batter; somewhere in between.
You can find brioche from a local bakery. Or, if you are ambitious, look up a recipe online. That’s what I did. Typically the Monte Cristo is also deep fried, and you can do that if you’d like, but I prefer it skillet-fried, almost like French toast, and sometimes with syrup! It is oooo-ey, goo-ey, and utterly amazing!“
